Banana Split Cakes

This week’s Works For Me Wednesday is all about our favorite summer foods. Even though I already shared my Fruit Salsa recipe, I’ve got another sweet treat that the boys beg for almost every day. Banana Split Cakes.

  • 2 rice cakes, I prefer the carmel corn flavored ones
  • vanilla yogurt
  • 1 banana
  • strawberry syrup
  • peanuts

Each boy gets 1 rice cake for their snack. First I spread a good glob of the yogurt across the top. Then I slice up half a banana on each cake, spreading the slices all across the top. I pour a little of the strawberry sauce across the top and sprinkle on the peanuts. Ta-da!

These are so yummy the boys absolutely love them. And with the yogurt and banana and nuts they’re fairly healthy for how sweet they taste. The only real downside is the strawberry syrup, and that could probably be replaced with real strawberries or some strawberry jam to be even healthier and still taste great.
