Fruit Salsa
Yesterday was hot and muggy. The kind of day where we pull out the kiddie pool and splash until all the water is gone. When the kids are ready to come in for a snack they want something quick and cold, and I want something healthy after all the running around they did. Fruit salsa is the go-to treat.
First thing I do is grab a couple tortilla shells from the fridge. Lightly butter them then sprinkle with sugar and cinnamon. I toss them in the oven at 350* F for about 15 minutes, or until it’s crispy like chips.
While that’s baking I pull out the bag of frozen fruit pieces. You could use fresh fruit chopped up into bite sized pieces, but I’m a lazy mom when the temp goes up. The frozen fruit is already chopped and it’s cold enough to keep the boys chilled. I dump the bag into a large bowl then add a big spoonful of whipped cream on top. Stir it all up then serve into individual bowls. Sometimes I’ll add some chocolate chips or chopped nuts on top.
When the shells are crispy I pull them out of the oven and let them cool a few minutes. Using my pizza cutter I slice the shells into triangles. Each boy gets one sliced shell with their bowl of fruit for dipping.
It’s cold, it’s sweet, they love it. And it’s real fruit, so much better than the “fruit” snacks with cartoon characters on the boxes I avoid at the store.
