Homemade and Healthy Skillet Burger Dish
I try to feed the kids real food over the boxed, food flavored crap. It’s hard on a tight budget, but so worth it in the end. However, from time to time Michael and I get a craving for some of the junk-in-a-box foods that we both new as kids. Like Hamburger Helper.
Yesterday for dinner I put together a homemade version of the traditional boxed burger meal. I can’t say it’s incredibly healthy, but it’s certainly better. And it didn’t cost an arm and a leg to make. In fact I ended up splitting this recipe in half, saving half of it for another meal in a week or two. So that’s 2 meals out of a few dollars, not too bad.
- 1 pound lean ground beef
- 1/2 large yellow onion, diced
- 2 carrots, shredded
- 2 cloves garlic, diced
- 1 can herb tomato soup
- 2 ears fresh corn, shucked and corn scraped off
- 2 cups egg noodles
- 2 cups water
- 1 cup shredded cheddar cheese
In a large skillet toss in the diced onion and garlic, saute until brown and smelling yummy. Add the burger and brown, stirring to mix the onion and garlic well.
When the burger is browned stir in the tomato soup and water. Bring this to a boil, then stir in the noodles. Cover and simmer for 10 minutes.
When noodles are softened stir in the carrots and corn. Put the lid back on and simmer another 5-15 minutes until most of the liquid is absorbed. Remove lid, cover everything with cheese, put the lid back on and turn off the fire. Let it set there until the cheese is melted and bubbly.
We had enough of this that I put half in a dish and stuck it in the freezer, and there was still enough that Michael (Mr. I hate veggies) and I both had seconds. I served it with a big batch of homemade mashed potatoes and dinner rolls for an absolutely yummy comfort food meal. I’m still licking my lips over how good this tasted.
