Homemade Veggie Burgers
Welcome to another wonderful Works For Me Wednesday. I thought since the weather is warming up, spring is coming, and some of us are getting our gardens started I would share a favorite recipe for you to use with those yummy goodies you harvest. This is my favorite veggie burger recipe, with slight tweaking so that Dearest will eat it without complaining. Too much at least.
- 1/2 cup sunflower seeds
- 1/2 cup peanut butter
- 1/2 cup grated carrots
- 1 cup rolled oats
- 1/2 cup chopped onions
- 1/2 cup diced spinach leaves
- 2 tsp sesame seeds
- 1/4 tsp sea salt
- 1/8 tsp rosemary
- 1/8 tsp basil
- 2 tsp ground flaxseed (you can find it at most health food stores)
- 1/4 cup water
Toast the sunflower seeds in a dry frying pan over a low-medium heat, stir constantly until browned. Remove seeds from pan and set aside. Combine in a medium bowl the peanut butter, carrots, oats, onions, spinach, sunflower and sesame seeds, sea salt, and herbs. Slowly stir in water and flax seed. Form into 1/2 inch patties and fry over medium heat. Be sure to oil the pan to prevent the patties from sticking.
These are so yummy and brown up nicely. I like to add a dollop of salsa to mine and eat it on a bun, but Dearest and the kids eat theirs’ like regular burgers. They don’t taste like burgers, obviously, but they still have a great flavor. Dearest didn’t like them the first time or two I made them, but quickly came around and learned to love them. The boys thought they were great from the start, especially with a slice of cheese melted over them. The best part is they are really healthy so no guilt over serving burgers and fries for dinner!

I just read all the posts I had fallen behind on in the past several days. I love your blog b/c you’re so socially conscious. I know you already know this, but still…I’m going to say it. Or I already did. I just mean that I love seeing stay-at-home mom related stuff discussed in a context that’s all about social politics. That’s the stuff that gets me excited! Now I have to go check out that breastfeeding link and go read those stories.

Yep, peanut butter. You can’t really taste it with everything else, it just works to hold everything together. The original recipe I had called for pumpkin seed spread instead, but I never could find that. So I used what I had.
Just in time for my daughter’s conversion to vegetarian!
