I Need Honey, Honey.

Pulling this one out of the archives for Works For Me Wednesday. Enjoy! 

I had planned on making Christine’s yummy bread today, but apparently I’m out of honey. How in the world I could be out of honey I haven’t the faintest. But it is on my list, and will hopefully bought next week. Or there will be whining. The kind of whining my kids could only dream of. Until then, I thought Christine should know that she’s been immortalized. Her recipe has gone into my personal cookbook. That’s right, years from now my grandchildren will know of Christine as the creator of wheat bread for morons. It’s an honor.

I figured since Christine shared her super yummy (I hope) bread recipe I would share a recipe. One that I haven’t made yet because, yet again, I’m out of honey. But the friend who passed this on to me assured me it was indeed yummy.

Rice Milk

  • 1/2 cup brown rice
  • 8 cups water
  • 1/2 teaspoon sea salt
  • 1 cup or more cold water
  • 3 tablespoons maple syrup or honey
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon granulated kelp (optional)

Place rice, 8 cups water, salt, and kelp in pan. Cover and bring to a boil over high heat, reduce heat to low and simmer 3 hours, or until rice is very soft. (You can also do this in a crockpot overnight.)

In blender, puree rice mixture with remaining ingredients. You will have to do it in two batches. Puree each batch at least 2 or 3 minutes to completely liquefy the rice. Add more water if a thinner consistency is desired. Keep refrigerated.

Yield: About 6 cups

Yes, it’s to make your own rice milk. I feel like I’m in some sort of hippie contest.

“I make my own whole wheat bread.”
“Oh yeah, well I make my own rice milk.”

    Mmmmm … that sounds delish!

    OH, and the kids missed their muffin-making class yesterday, so I let them make some cookies (with wheat flour and honey, of course!). Anyway, we’re out too!

    I’ve yet to find a way to buy it any bigger than 3 lbs. If I do, I’ll let you know! We go through that stuff!!

    Well spinning my own wool is a bit in the future but there in my long term plans.

    We never run out of honey, my father in law has beehives so we get super good raw honey for free. It is such a delightful thing to know a bee keeper.

    I’ve a friend who spins her own angora.

    I used to bake my own non-wheat bread every week for my allergic-to-wheat child. He outgrew it around age 8, so I stopped baking! lol

    Cool. I didn’t know this was so easy!

    MY dd will be impressed when she comes to visit and I have rice milk. She’s allergic to all kinds of things.

    Great recipe! I’ll have to try it, I never considered doing it in the crockpot. I make rice milk quite often but have a little different recipe, but haven’t been too happy with it. I’ll try it out.

    Just out of curiousity…what does the kelp do? Where do I find it?
